A hardy perennial growing up to 1.5m tall when flowering. It prefers a well drained, moist soil in full sun to ensure an optimum harvest. The root is harvested after the plant has gone dormant after heavy frosts and can be grated fresh or preserved in vinegar. If horseradish has not been in ideal conditions, it may be better to harvest in the third year to allow roots to get to a decent size. A 10cm section of root should be replanted to be harvested in future years.
